Sweet Potatoes with Apples and Walnuts

What you need: 

2 large or 4 smaller sweet potatoes, peeled and diced

2 Granny Smith apples, peeled and diced

1 cup raw sugar

1/4 cup water

1/2 cup coconut milk

1 teaspoon cinnamon

1 teaspoon sea salt

1/4 teaspoon ginger

1/4 teaspoon cloves

1/4 teaspoon nutmeg (I use freshly grated)

1 cup walnuts

What you do: 

Preheat oven to 375 degrees F.

Place sweet potatoes and apples in a baking dish and bake for 1/2 hour, or until sweet potatoes and apples are soft.

In a saucepan, combine sugar and water. Gently stir and cook until the mixture turns a dark amber color, but don't let it burn! Slowly stir in coconut milk. Remove from heat and stir in remaining ingredients. Pour into sweet potato mixture and mix well.

Next time I'll double the glaze.

I often hear people talking about how marshmallows are yummy with sweet potatoes...do you think that would work in this recipe combined with brown sugar for the sweetener?

I'm a disciple of base, so I used pears and pecans.  This is seriously good stuff.  It would go well as a side dish or with ice cream.

I whipped this up last night using the incorrect measurements for the potatoes. I had two large and two small sweet potatoes. More than the wife and I could handle! I also used one granny smith and one fuji apple, used almonds instead,  and to make things even sweeter, I used half a cup of brown sugar, and half a cup of apple cider drink mix.

I think I also blanched my potatoes a bit too long, because it caused them to get a bit mashed, but they were delicious never the less.

This was soooooo good.  Even my omni family loved it.  I can't really afford to be vegan so I used "food club" brand margarine, and a 1/2 cup brown sugar, and 1/2 cup maple syrup, but I did splurge and use the REAL maple syrup that I got from the maple festival awhile back which is so good anyway.  I will definately be making this again.  Even my 6 month old son got to enjoy, indirectly.  I had too much sweet potato/apple mixture to fit in the baking dish I was using, so the exess mixture was put aside, boiled, pureed and turned into baby food and that is what he ate for supper.  It was a great side dish to our dinner.  Thanks for the recipe.

I also use earth balance margarine (because it's the only one that's available for me too). But is it gross? I've read several reviews that say the same thing "only because it's all I can get". It doesn't taste that bad to me... is it unhealthy or bad in some other way? What is a better margarine? (I usually only use margarine for baking.) Also, I live in Toronto, any Canadian vegans know any secret awesome margarine?

Hi all,

I didn't notice the error before.  It should read 2 large or 4 smaller sweet potatoes.

Also, I have started steaming the potatoes for 10 minutes, instead of blanching for 5 minutes.  This is a little easier since you don't have to wait as long for the water to boil and you don't have to worry about draining.

I also decided it is better uncovered the entire time (45 minutes).

this was fantastic! really sweet and delicious, and definitely a unique combination for me! i used 1/2 brown sugar and 1/2 maple syrup for the sweetener and added both walnuts and pecans.  next time i will probably add more apples or less potatoes, to adjust the ratio as someone else mentioned.

Made this for Thanksgiving (using brown rice syrup and maple syrup) and everyone LOVED it!!  I was surprised at how well apples and sweet potatoes go together. It is very sweet like a dessert but feels like you're eating something healthy. Tastes great cold as leftovers too. I will definitely be making this again and again!

I made this for a potluck and everyone was surprised that they actually liked a vegan dish!  I like it with a higher apple-to-sweet potato ratio, plus it makes a lot, so I usually only use 3 sweet potatoes.

I made this again this year for thanksgiving and it was everyone's favorite dish! I doubled the recipe and used 2 granny smith apples and two pears. I also used pecans instead of walnuts and thought it was even better this way. What a superb recipe!
