Sweet & Sour Eggplant

What you need: 

1 large onion, chopped finely
1 clove garlic smashed
1 large eggplant cut into irregular chunks
1 Tablespoons sour salt (citric acid) sprinkled on the eggplant
5 Tablespoons powdered drink mix of choice
no stick spray
2 Tablespoons olive or canola oil
2 cups water

What you do: 

As you are chopping the eggplant, sprinkle them with a little sour salt and put them in a bowl filled with water. Sauté onion and garlic in 1 Tablespoons oil & spray until garlic is tender. fish it out. don't let it burn. continue sautéing onion until they are brown around the edges. remove from pan and put aside. Put the eggplant in the same pan and saute it too. Save 2 cups of the soaking water. Dissolve the powder into the water and pour it into the saute pan as the eggplant is cooking. Stir frequently. At end of cooking, add the onion.
