Swiss Chard and Orzo Soup

What you need: 

2 tablespoons olive oil
1 onion, chopped
1 stalk celery, sliced
1 carrot, sliced
15 cremini mushrooms, sliced
3 garlic cloves, minced
1 yellow pepper, diced
2 cups chard, shredded
6 cups vegetable stalk
1 teaspoon thyme
2 tablespoons lemon juice
1 cup cooked orzo pasta

What you do: 

1. Saute onion, celery, and carrot in olive oil until onion is translucent and carrots are beginning to soften.
2. Add mushrooms, garlic, chard and yellow pepper and cook 5 more minutes.
3. Add vegetable stock, thyme, and lemon juice and cook until chard is soft. Add orzo before serving.
Source of recipe: I created this recipe when having an abundance of chard and a small addiction to orzo.
