Taco Salad

What you need: 

1 can stewed tomatoes
1 can red kidney beans
dash of: cumin,
pinch of salt
small onion
fresh cilantro (to taste)
bell peppers
lettuce, mushrooms, broccoli, soy cheese,
tortilla chips

What you do: 

In a large pan bring stewed tomatoes, and kidney beans to a boil. Add onion and bell pepper. Stir. Add herbs to taste. Let simmer for approx. 10min. Add fresh cilantro. Crush tortilla chips on a plate. Add lettuce and taco mixture. Top with your favorite vegetables and soy cheese (optional). I recommend unsalted chips, and lots of veggies! Yum!!!
