Tamale Pie

What you need: 

2 small or 1 large carrot, chopped
1/2 teaspoon oregano
1/2 teaspoon cumin seeds, toasted and cracked (or just under 1/2 teaspoon ground cumin)
1/2 teaspoon coriander seeds, toasted and cracked (or under 1/2 teaspoon ground coriander)
1 jalapeno, diced
1 (15 ounce) can black beans, rinsed and drained (or about 1 1/2 cups cooked dried black beans)
12 ounces chunky salsa
2 ounces tempeh, diced, optional
2 cups water
dash salt
1 cup fine yellow corn meal
2 teaspoons chili powder

What you do: 

1. Preheat oven to 400 degrees F. Saute carrots in vinegar or whatever you usually use, along with the oregano, cumin, and coriander. Add the jalapeno and the beans, stirring and cooking about 3 min, then add salsa and reduce heat to a simmer. Brown tempeh, if using.
2. While the bean mixture is simmering, bring water to boil with dash of salt. A little at a time, sprinkle the corn meal into the boiling water, stirring constantly to avoid lumps. Continue sprinkling and stirring until you have a thick porridge resembling grits or cream of wheat. Don't force all the corn meal into the batter if it looks done with less.
3. Remove cornmeal batter from heat and stir in chili powder. The bean mixture should be just about cooked now. If carrots are tender, remove bean mixture from heat. Spread 1/2 the corn meal mixture into the bottom of a large loaf pan or small baking dish.
4. Spread all of the bean mixture (or as much as reaonably fits in your pan) onto the corn batter. Top with remaining 1/2 the batter, kind of like a top and bottom crust. Bake for 30 minutes, or until the top corn meal batter is pretty firmly set.
Garnish, if desired, with fresh tomatoes, cilantro, scallions, hot sauce, etc.

SO HOW'D IT GO?

Thanks for the recipe! I used this more as a base for what I made. I made the filling with refried black beans, corn, grilled onions, green peppers, jalapenos, yves meatless ground, and a bunch of daiya cheese (both yellow and white). I topped with sour cream, tabasco chipotle sauce, and avocado. Sooooo yum! Thanks again!

Are you all using regular cornmeal or masa harina for this?  Would either work?

I didn't bother with the carrot as it didn't seem like it would make much of a difference if I left it out...and it didn't. This was a really basic dinner but still delicious! I also added some butter to the cornmeal mixture so it had a little more flavor.

I don't really like cooked carrots, so I used a bell pepper instead. I also added about 1/2 cup textured soy protein ("beef" cubes) to the black beans. My husband and I thought it was so delicious, we are making it again tonight! I think instead of the pepper, we will add in some corn and black olives...thanks a bunch! :)

This was a pretty good recipe.  I used 2 tsp of olive oil to saute the veggies, added some onions and used the cornmeal mix as the topping. The next time I make this I'll add more spices and heat...

its been raining and cold all day
so i'm making this for dinner!

i've pre determined though, that black olives are a must as is homemade chile, chili powder, corn kernels cillantro and an avocado to put on top when its done baking.

i cant wait! ;)b

I wasn't a huge fan of this recipe. The inside was good, but the cornbread top had no flavor.

Hi i just wanted to tell you what i did to enhance the flavor of the crust, i added sea salt chilli powder and spike also to me it tastes much better once it has sat in the fridge a few hrs...if it lasts that long in my house also i added sliced green olives to the cornmeal mixture b4 spreading it was really good.... ;)b

This was delish actually the first time lol i only had pasta sauce but suprisingly it still turned out delish this time i made it with the salsa and added frozen corn pintos instead of black beans and some fried chopped gardenburger...yummmmyyyy
