Tangy Cheeseless Cheese Sauce

What you need: 

2 tablespoons vegan margarine (Earth Balance is good)
2 tablespoons unbleached all purpose flour
1 cup unsweetened nondairy milk (I use soy)
1/4 cup nutritional yeast flakes
1-2 tablespoons tahini
1-2 teaspoons lemon juice
1/2 teaspoon onion granules
1/4 teaspoon garlic granules
1/2-1 teaspoon vegan Dijon mustard
1/2-1 teaspoon vegan Worcestershire sauce
good pinch cayenne pepper
salt, to taste

What you do: 

1. Melt margarine in medium saucepan. Add flour and stir well with wooden spoon over medium heat. Watch for burning! Do cook the flour for at least a minute until the mix looks frothy and bubbly. Remove from heat.
2. Stir in milk, stirring all the time and keep stirring off the heat until all the liquid has been incorporated into the mixture and there are no lumps. Return to low heat and stir until thickened.
3. Add in nutritional yeast and remaining ingredients and stir until smooth. Taste for seasoning. Serve hot over veggies, on English muffins, for mac and cheese, grilled cheese sandwiches... out of the pot with a spoon...

SO HOW'D IT GO?

Most amazing cheese sauce ever, I want to eat it with a spoon.  I used 2tbsp of flour and it's way to much this sauce is so thick I can not use it on pasta.  Next time I am either gonna use 1tbsp or maybe even 1tsp (will have to experiment). I need it to be somewhat runny to drizzle on pasta.  I accidently used 1tbsp lemon juice and was worried but it still tastes amazing and has a hint of lemon.

I've been making this a while, and just about every time I have to substitute one thing or another, and it always turns out great. This time, I subbed soy sauce for Worcestershire and regular mustard for the Dijon. I finally got some tahini, which was a definite improvement. It was freaking amazing as a grilled cheese sandwich, which is one of my favorite ways to eat it. Nachos are great too!

OMG! This stuff is awesome! We omitted the tahini because we ran out and we used tamari instead of worcestershire. It was still great. I can definitely see where the tahini will make it even better, though.

This is my new favourite sauce - I put slightly more Tahini in it and slightly less nutritional yeast, so it tastes more like a tahini sauce with a cheesy background flavour and I just love it. I discovered the recipe 4 days ago and already made it 3 times!

This was my first attempt at making a cheez sauce so I didn't really know it would turn out.  The texture was kind of pasty but the flavor was very good.  I had it over some whole wheat pasta but liked it better when I dipped some grilled veggies in it.

Love this!  I use it to make super yummy sandwiches!  For more info on this mouth watering sandwiches check out the recipe.  Without this cheese sauce they would not be possible, so thanks again!

FINALLY a cheese sauce I like! I made a few changes: I used rice flour instead of all-purpose (gluten-intolerant), I used almond milk instead of soy (definitely recommend this; it gives the sauce a nutty, gourmet flavor), I used peanut butter instead of tahini, apple cider vinegar instead of lemon juice, regular mustard instead of dijon, and about a tsp. of Lipton Onion Soup Mix instead of onion and garlic. I also did not add very much salt. The first day I made this I mixed half with some hot salsa and extra cayenne for a nacho cheese sauce. I finished it off and licked the bowl, then went back into the kitchen and dipped some chips into the sauce still left in the pot. It took some serious self-control not to finish the whole batch off lol. I put the rest in a tupperware container, then I licked the pot and the spoon (I'm not usually partial to such gluttonous tendencies...).  I just made it again today to go on some vegan griddle sandwiches (like a vegan version of McGriddles). I think the main problem with most cheese sauces is that they're more buttery and rich and don't have the tangy taste that real cheese does. Plus they usually have a bitter aftertaste from the nutritional yeast. This is the best cheese sauce period. I love you.

This is one of my favorites! My non-vegan family even loves it. I used spelt flour and coconut milk (relso afridge section not fom can). I added red, black. and white pepper.At the end I added chopped grilled yellow peppers, and one 8 oz jar of Eggplant salsa. I added sauce to scalloped potatoes with faux canadian bacon. Sooooooo good!

I just got done eaten a good amount of food... but reading this made me wish I was ready to eat again!! Thanks!
