Tasty Tomato Rice Casserole

What you need: 

1 cup uncooked rice
1 pound package burger-style crumbles (1 package usually)
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
1 teaspoon salt
1 teaspoon paprika
1- 10oz can of tomato soup
1/2 cup water

What you do: 

Cook 1 cup of uncooked rice in rice cooker or on stove.
Preheat oven to 350F.
Cook onion, green pepper, celery, and burger crumbles in a frying pan in a bit of oil or cooking spray. Season with salt and paprika.
Combine cooked rice with tomato soup and water. Add veggies and crumbles. Stir together and pour into a casserole dish.
Bake for 25 minutes.

SO HOW'D IT GO?

This was good :) As suggested above, I used salsa instead of the tomato soup and added way more veggies than original recipe called for. Also, I didn't need to use the 1/2 cup of water, but that is probably because I used salsa instead of the can of soup... Anyway, it was good!

i thought this dish was a little on the bland side.  i will try to make it again, but maybe mix in some taco seasoning or other spices in and/or some canned diced tomatoes.

Such a tasty rice dish. We don't have faux meat where I live so I had to do it without it, but it still tasted amazing. Thank you will do it again!!!
