Tasty Warm Tofu Sandwich

What you need: 

1 block firm tofu, drained
1 ripe avocado
1 red pepper, sliced thinly
1 teaspoon lemon juice
1 teaspoon sesame or peanut oil

What you do: 

Place peppers on large piece of foil, sprinkle with lemon juice. Wrap up foil like a packet and bake in oven for 30 minutes at about 300.
Meanwhile, slice tofu block down its center, then again so that you are left with four large slices about the size and shape of a slice of bread. Pan-fry these while peppers cook.
Also, mash the avocado with the rest of the lemon juice.
When peppers are ready, place one piece of tofu on each plate. Top each with half of the avocado mixture. Layer peppers on top of avocado mixture, and top with second slice of tofu to make sandwich. Serve warm or cold.
