Tator Tot Casserole

What you need: 

1 large bag tator tots
2 cans vegetarian cream of mushroom soup
1/2 cup soy milk
1 bunch fresh broccoli
1 can water chestnuts
1 bag american cheese

What you do: 

Preheat oven to 350 degrees
Spray casserole dish with non-stick cooking spray
Lay tator tots on bottom to form an even layer
Mix soup and milk together and pour 1/2 over tator tots
Cut broccoli into small pieces and layer on top of tator tots
Layer on water chestnuts
Pour rest of soup mixture on top
Top with american cheese
Bake for 30-40 minutes
**I am not vegan so I use real cheese to top of the casserole*

SO HOW'D IT GO?

This is a pretty great (and REALLY filling) recipe. I also added a layer of sauteed onions, a breadcrumb topping and a sparse layer of Yves meatless grounds. To me personally, although I ate a lot of it, there was some underlying taste that bothered me a little (I think it might have been a combo of the brands of mushroom soup and tater tots I used as some of them can have brand-specific minute taste differences) but not enough that I didn't keep on eating!
