Tempeh Reuben

What you need: 

8oz package tempeh
14 1/2 oz can sauerkraut
8 slices rye bread
4 slices swiss cheese substitute (I prefer almond cheese, it melts
the best , but soy or rice cheese works)
Egg-free 1000 Island dressing
oil for frying tempeh

What you do: 

Slice tempeh into thin strips and place into frying pan slightly coated with oil. Cook until browned and remove from heat. Place 2 slices of rye vegan bread in pan. Place 1 slice cheese substitute on one slice and dressing and sauerkraut on other slice. Allow vegan bread to toast and cheese to melt. When cheese has melted, place strips of tempeh on the vegan bread with sauerkraut and dressing and cover with the melted cheese vegan bread. Continue process with remaining slices of vegan bread and serve :)

Pretty good recipe.

I used vegan mozzarella cheese which was just as good as vegan swiss.
I think most vegan cheese tastes similar.

I also added soy bacon to the sandwich since I've seen reubens before with bacon. It's a great addition.

Excellent!!!! I love reubens now, even though I had never had one before going vegan...but I usually make them with seitan....never thought about tempeh...
I also marinated the tempeh in soy sauce, balsamic vinegar, and misc. spices.....chopped it up into strips and cooked in a skillet for a while....
Used rye bread, saurkraut (which I love now), melted a little Follow Your Heart Monterey Jack, and made my own sauce out of veganaise, sriracha, and relish.  Grilled the sandwich in the same skillet for a few minutes and it was wonderful!
I should have taken a picture....I will next time.

Delicious recipe.  I marinated the tempeh first (as the previous poster suggested) and it was very tasty.  I substituted my own dressing for the thousand island - it's easy - one part vegenaise and one part chili sauce.  I cooked the tempeh on the stove, then placed the two slices of bread, slightly buttered with earth balance, placed them in the oven on broil for a minute to melt the butter.  I then added the cooked tempeh and sauerkraut to one slice, the sauce and cheese on the other.  Broil for 4 or 5 minutes, remove, and make your sandwich.  Yum yum.  What a great use for my homemade sauerkraut!
