Terrys Chapati Wrap

What you need: 

1 whole wheat chapati-unleavened bread like a tortlla
1 tablespoon humus
1/2 cup cookd brown rice
1/2 cup cooked black beans
1/2 small red onion sliced
1/2 small tomato chopped
1 teaspoon olive oil
1 teaspoon balsamic vinegar
few sprigs fresh cilantro

What you do: 

In a small skillet saute the tomato and onion in the olive oil and vinegar. Only for a short time so the onion stays just a little bit crisp. Lay out the chapati and start to layer: 1. humus -2. rice -3.beans -4.onion and tomato mixture -5.cilantro.
Roll up and nuke for 2 minutes.
Super enjoyable for quick lunch.
