Thanksgiving Meat Loaf

What you need: 

2 egg replacers
(I use 1 tablespoon arrowroot powder + 1 tablespoon corn starch + 4 tablespoons water)
1 tablespoon soy sauce
1 (12 ounce) box medium-firm silken tofu
1 (1 1/2 ounce) packet vegan dried onion soup mix
3/4 cup walnuts, chopped
1 teaspoon oil
1 1/2 cups onion, chopped
3/4 cup celery, chopped
2 cups mushrooms, chopped (I use portobello mushrooms)
1 1/2 teaspoons basil
1 1/2 teaspoons oregano
1/2 teaspoon sage
1 1/2 cups bread crumbs

What you do: 

1. Preheat oven to 350 degrees F. Mix egg replacer, soy sauce, tofu, and onion soup mix together in blender. Add walnuts and blend until smooth. Grease a loaf pan.
2. Heat oil and saute onion, celery, and mushrooms until onions are transparent. Add basil, oregano, and sage while vegetables are frying.
3. Thoroughly mix blender ingredients, cooked vegetables and bread crumbs together in a large bowl.
4. Press into prepared loaf pan. Bake for 75 minutes. Let cool slightly. Turn loaf out and slice.
To make it stick together better, try lowering the bread crumbs to 3/4 cup and adding one of the following: 1 extra box tofu, 1 cup instant mashed potato flakes, 1 to 1 1/2 cup(s) cooked brown rice or 1 cup burger-style crumbles. You can also cover the top of loaf with ketchup before baking.
This has become a standard dish at my parents' house when all sorts of eating habits must be catered to. Even the most obstinate meat eaters love it. It is also excellent the next day cold on a sandwich with a bit of mustard.'

SO HOW'D IT GO?

I tried this recipe on my Husband who's favorite meals happens to meatloaf with collard greens, mac & cheese, etc. I made this for him about three weeks ago and he loved it so much! He said he couldn't even tell that he was not eating real meat. SInce it was a hit I plan on making it again tonight, even though I am missing the walnuts (I do have almonds) and onion soup mix. Somehow I think I can pull it off again. Thanks a lot for this!

I made this for dinner last night and my Husband loved, loved, loved it! MEatloaf was one of his favorite meals and the fact that he could eat it once again made it even better. He said if he didn't know any better he would have thought there was meat in it. I will definitely be making this again and maybe the next time we have company I can shock them with this meatless meatloaf. LOVED IT!

I finally got my family to make an all vegan christmas eve dinner and this recipe was the highlight of the meal.

The center of mine was a little soggy which caused it to fall apart, to make it less soggy I put it back in the oven. Overall this was really good, I think next time I make it I'll omit the soy sauce and maybe try to find a low sodium onion soup mix because it was too salty for my taste.

I really love this recipe, it is a wonderful idea.

The only thing I changed the second time I made it, was I used vegetarian chicken gravy mix (from raley's) instead of onion soup mix, added a little garlic, and left the walnuts chopped instead of blended to give it more texture.

Mine came out a little too moist in the middle, I left it in longer, but was too afraid of burning the rest of it.  Whatever you do, don't think to yourself '2oz of onion mix is almost like 1.5 oz'  I nearly died of onion overkill.  Other than that, it was fantastic.  Definitely great cold on sandwiches :)  I am definitely going to try this one again.

i made this 2 times with a couple little changes.  the first time i used the 1 cup of potato flake variation and i felt it was a little too soft still.  the 2nd time i did 1/3 breadcrumbs, 1/3 potato flakes, 1/3 crumbles.  i liked this texture better and i really like the flavor the flakes add.  also, i used finely chopped carrots instead of the celery cus i dont like celery and it was really good.  i topped it with some hain brand gravy and it was delish, my parents even ate it!

In addition to lengthening the cooking time, I've found that using a more shallow pan really helps to keep the insides from being so mushy.  Instead of a loaf pan, I usually use a square cake pan and liberally coat the loaf with ketchup so it gets kind of burnt and carmelized.  Yum!

It was delicious, but like everyone else, I wasn't really into the soft middle.  I will experiment with the ingredients to make it more meat-like.  Everything else worked very well!

this was quite goood. it was hard for me to blend, but it turned out smashingly!

it was quite rich though and i can only eat a little at a time. it is also really good with some rice!

(i added the veggie crumbles becuase i was too lazy to make brown rice)
