Thanksgiving Meat Loaf

What you need: 

2 egg replacers
(I use 1 tablespoon arrowroot powder + 1 tablespoon corn starch + 4 tablespoons water)
1 tablespoon soy sauce
1 (12 ounce) box medium-firm silken tofu
1 (1 1/2 ounce) packet vegan dried onion soup mix
3/4 cup walnuts, chopped
1 teaspoon oil
1 1/2 cups onion, chopped
3/4 cup celery, chopped
2 cups mushrooms, chopped (I use portobello mushrooms)
1 1/2 teaspoons basil
1 1/2 teaspoons oregano
1/2 teaspoon sage
1 1/2 cups bread crumbs

What you do: 

1. Preheat oven to 350 degrees F. Mix egg replacer, soy sauce, tofu, and onion soup mix together in blender. Add walnuts and blend until smooth. Grease a loaf pan.
2. Heat oil and saute onion, celery, and mushrooms until onions are transparent. Add basil, oregano, and sage while vegetables are frying.
3. Thoroughly mix blender ingredients, cooked vegetables and bread crumbs together in a large bowl.
4. Press into prepared loaf pan. Bake for 75 minutes. Let cool slightly. Turn loaf out and slice.
To make it stick together better, try lowering the bread crumbs to 3/4 cup and adding one of the following: 1 extra box tofu, 1 cup instant mashed potato flakes, 1 to 1 1/2 cup(s) cooked brown rice or 1 cup burger-style crumbles. You can also cover the top of loaf with ketchup before baking.
This has become a standard dish at my parents' house when all sorts of eating habits must be catered to. Even the most obstinate meat eaters love it. It is also excellent the next day cold on a sandwich with a bit of mustard.'

SO HOW'D IT GO?

Delicious!!  My newly veg curious partner gobbled this up in no time and is planning his lunch tomorrow with left overs on toast!  Quite an achievement tempting his meat loving taste buds!

I added a grated carrot and grated zucchini and diced green capsicum to the veggies and added some garlic to saute.  Stired a couple of tablespoons of tomato paste into the veggies. I also only added the 3/4 cup of breadcrumbs and used  1 1/2 cups cooked brown rice cooked in vegan 'chicken' stock.

Thanks for the awesome recipe .. this one is going on regular rotation!!  :)

I followed the directions accordingly and baked it for 1 hr 30 min, and it was still soggy!

This recipe is great!  I followed the recipe except only used 1 cup of onions (my kids thought it was still too much onions), and used 3/4 cup  brown rice and 3/4 cup bread crumbs.  Make sure to chop the veggies pretty finely or it seems more like stuffing than meat loaf.  I will definitely make this next week for Thanksgiving! :)

I tried out this recipe Friday night. It turned out to have a wonderful flavor. I followed the recipe as best I could, but  I added a few extra ingredients that I had hanging around the house that I wanted to use up. I added 1/2 of a chopped bell pepper, 2 smalled shredded carrots, 1 cup of cooked wild rice, 1 cup of wheat germ, and about a half of a cup of dried oats. I spread the mixture into 2 loaf pans and applied a layer of organic ketchup on top before baking. I baked the loaves for about 1hr 40min.

I let the loaves cool for about a half of an hour before cutting into one of them. It smelled wonderful, but was not as firm as I would have liked. Next time I make this I will add more breadcrumbs and dry oats. I think that this may help to soak up some of the excess water from the veggies that made the loaf a bit mushy. Mushy or not, this is a terrific recipe. It is Monday afternoon and I have already devoured both of the loaves.  :-[

tasty. the only downfall to this recipe is the heinous gas both me and my husband have been experiencing. I could barely sleep last night with that smell... it's a bad smell!

but the loaf itself tasted pretty good.

I think this would have turned out better if my blender wasn't a piece of junk  ;)  I plan on trying it again once I get myself a decent food processor or blender. I didn't have onion soup mix so I just mixed together some spices.  However, I thought it was yummy and had it with vegan gravy and mashed potatoes.  Thanks for the recipe! :)

hope this helps for VEGAN ONION SOUP MIX problems. i haven't made the loaf yet but i am tonight and will tell you how it turns out with the homemade onion soup mix. ;D

ONION SOUP MIX
4 TBSP. dry minced onion
1 TBSP. onion powder
2 TBSP. veggie bouillon or 4 cubes
1/2 tsp. celery salt
1/4 tsp. sugar

Really really good, but I used the wrong kind of tofu ???. This year I know it'll be perfect.

And to the last post, I think any onion soup is vegan.

I can't find a vegan onion soup mix. Is there something I can use insead?

I have been making this every Thanksgiving since 1998. Everyone loves it. I don't know how to thank you. :)
