What you need: 

3 (8 ounce) tubs vegan cream cheese (I use Tofutti Better than Cream Cheese)
1/4 cup lemon juice
2 teaspoons vanilla
1 cup sugar
1/4 cup flour
1 pie crust

What you do: 

1. Preheat oven to 350 degrees F. Mix the cream cheese, lemon juice, vanilla, and sugar together in a mixing bowl.
2. Once smooth, fold in the flour, mixing well. Pour into pie crust.
3. Bake for 30 to 40 minutes, until the top just starts to turn brown. Refrigerate overnight.
Add toppings, if desired.

SO HOW'D IT GO?

In the oven now :). I only had to use two tubs of tofutti though-- I kept everything else the same; the batter tasted perfect. I've been craving cheese cake forEVER now! Thanks for this :)

great cheesecake: i cut 1/3 of the ingredients as substituted some cookiedough--turned out delicious.
