These are ahuhhot hot hot noodles

What you need: 

1 package soba noodles (udon are also an option)
1/2 red bell pepper, cut into small pieces
2 scallions
1 tablespoon sesame seeds
1 teaspoon fresh parsley chopped v. small
1 tablespoon hot sesame oil
2 tablespoon rice vinegar
2 tablespoon mirin
salt

What you do: 

Cook noodles, rinse and drain. Combine with veggies and seeds. Combine wet ingredients separately and mix all with noodle medley. Serve as a salad or a cool side dish.
