Time-Warp Lemon Squares

What you need: 

Crust:
1 cup all-purpose flour
5 tablespoons margarine
1/4 cup granulated sugar

Filling:
3 egg replacers (I use Ener-G Egg Replacer)
3/4 cup granulated sugar
3 tablespoons all-purpose flour
1 teaspoon real vanilla
1/2 teaspoon baking powder
1/8 teaspoon salt
2-3 lemons, zested and juiced

powdered sugar, optional

What you do: 

1. Preheat oven to 350 degrees F. For crust, in a bowl, combine crust ingredients and press into 8 X 8" pan. Bake for 15 minutes.
2. For filling, while crust is baking, beat the egg replacers in a bowl until foamy. Add the remainder of the filling ingredients and mix together. Pour over the crust, and bake 20 minutes more, or until set. Cool.
3. For topping, sift powdered sugar on top, if you'd like, and enjoy the trip down memory lane!
For fancier version, add a layer of vegan cream cheese mixed with a little powdered sugar over the baked crust before you pour in the filling. (You may have to cool the crust a bit before spreading the layer out.)

SO HOW'D IT GO?

I didn't like these. They were hard, had almost no lemon part to them, were tasteless, I just don't really have anything good to say about them. I followed the recipe exactly so I'm not sure why mine came out awful when everyone else seems to have had awesome ones. I won't make these again.

These are wonderful. Gooey and chewy, lemony and wonderful. The recipe is so simple. I used 6 tablespoons of lemon juice and the zest of 2 lemons. I think the crust was just a bit dry, but I live at high altitude so baking is always trial and error, next time I think that I will add maybe a tablespoon of applesauce on top of the butter.

I thought these were just okay. There were some parts that looked undone after the 20 minutes and so I kept it in the oven like at least another 10 minutes (still never looked like the rest of the cake .. it was bubbling). I finally called it quits and took it out, even bubbling like that. I cut them up and sprinkled with powdered sugar after they cooled. The only problem was that it tasted overdone.... and that's my bad but it just looked undercooked. The crust was really chewy and started to get hard... I'll stick more to the cooking time next time. Also, I used 2 T margarine, 3 T applesauce. I used zest and juice of 3 lemons and also added a T of bottled lemon juice. I also put in the cream cheese layer. They will taste great next time I'm sure.

these were a little too good! i've eaten half of them by myself!  :P i followed the recipe exactly, and will do so next time (and the next...) great recipe!

oh these are good! I used applesauce as my egg replacer and to replace half the margarine in the crust, too. worked out great!

has anyone had any luck using psyllium husks as a egg replacer? i think they would work quite well.....i'll be making these tonight, and i'll post with an update!

I used gluten free flours and starches for the flour, 6 TB earth balance, no salt in the crust. I used flax gel for the eggs and 1/3 cup lemon juice baked for 20 + minutes. yay I hope they taste as good as they smell!
