Time-Warp Lemon Squares

What you need: 

Crust:
1 cup all-purpose flour
5 tablespoons margarine
1/4 cup granulated sugar

Filling:
3 egg replacers (I use Ener-G Egg Replacer)
3/4 cup granulated sugar
3 tablespoons all-purpose flour
1 teaspoon real vanilla
1/2 teaspoon baking powder
1/8 teaspoon salt
2-3 lemons, zested and juiced

powdered sugar, optional

What you do: 

1. Preheat oven to 350 degrees F. For crust, in a bowl, combine crust ingredients and press into 8 X 8" pan. Bake for 15 minutes.
2. For filling, while crust is baking, beat the egg replacers in a bowl until foamy. Add the remainder of the filling ingredients and mix together. Pour over the crust, and bake 20 minutes more, or until set. Cool.
3. For topping, sift powdered sugar on top, if you'd like, and enjoy the trip down memory lane!
For fancier version, add a layer of vegan cream cheese mixed with a little powdered sugar over the baked crust before you pour in the filling. (You may have to cool the crust a bit before spreading the layer out.)

SO HOW'D IT GO?

It took me a couple tries to get this recipe right (my own fault for not having all the right ingredients and making it anyways!) but once I did, they became one of my fav desserts.  Easy and delicious!  Thanx Greenplanner!  :)

wow! i made these lemon squares last evening, subbing the lemons/lemon zest for six wee key limes. omnivore boyfriend gave them a big thumbs up. for the margarine i used organic smart balance; which was the only vegan option offered at the local grocery store.

i dont know what i did wrong....but they didnt set AT ALL!

i kept it in 5 min longer, but i didnt want it to overcook.
i thought it would set once it cooled but it was as soupy as ever.

maybe becuase i used arrowroot powder as the egg replacer??

I submitted this recipe several years ago, and haven't been back here in a loooong time... I was so surprised and happy to see all of the positive comments. I'm really glad that people are enjoying these... I think I will make a batch tonight to celebrate.

I loved these! They tasted SO good! I used 3 lemons and they came out just perfect!

I don't have much of substance to add, but I just ate the last piece and it was soooo good I had to review. I have to admit though that the crust was amazingly difficult to cut - next time I will use only about 2 Tbsp of Earth Balance and the rest applesauce. I think that will make the crust chewier and lower in fat. Besides that, though, these are fantastic. I might even try making this into a lemon pie with some sort of whipped topping.

This recipe turned out wonderfully for me. The only way in which my squares were different from what the recipe prescibed was that I had to use brown sugar in place of regular white granular because someone used up the sugar and didn't put it on the grocery list so we were all out. But they came out beautifully (after the powdered sugar of course, they do look a tad naked without it) and tasted great. They impressed all of my omni friends  :)

I love this recipe!  I followed it to a tee, and they came out beautifully.  Everyone who had one also loved them!!  I've been doing a two-day bake sale and had to make more for the second day because they ran out.  Out of curiosity, I also tried making lemon-lime squares, and grapefruit squares, since they are both tart citrus fruits.  If you would like to make them, I would use the zest of 1 lime and 1 lemon, and the juice of 2 limes and 1 lemon.  The grapefruit squares needed the zest of 1/4 of a large pink grapefruit and the juice of the grapefruit.  The grapefruit squares also need a little more bake time!  Enjoy!

I just made these tonight! I followed the ingredients to a tee, except replaced eggs with 150mL of strawberry-applesauce :o SO GOOD!!
The filling wasn't set after 20 minutes though, so I left it in for another 5 minutes. Once they dried, I sprinkled powdered sugar over them. They're amazing! Thanks for the great recipe ;)

I made these today. Awesome!  :D I substituted 3 T of the margarine w/ a individual serving of unsweetened applesauce. Otherwise, I followed the recipe. If you're following Weight Watchers and do the applesauce modification, it works out to 2 pts per square (assuming 16 squares).
