1/2 cup frozen broccoli
1/2 cup frozen carrots
1/2 cup cooked rice (I used basmati)
2 tablespoons vegan butter (Earth Balance)
1 tablespoon tamari
1/4 cup water
-Heat earth balance or vegan margarine in a sauce pan on low to medium heat.
-Add frozen veggies and stir well to coat with the earth balance.
-Add water, reduce heat and let veggies steam for 5-10 minutes.
-Add rice to warm it back up and add tamari.
-Mash well with a spatula.
