Tofu Burger

What you need:

3-4 slices of regular extra firm tofu about 1/4 inch thick
1 tablespoon vegan mayonnaise
1 tablespoon prepared dutch mustard (check ingredients)
1/3 cup of flour
1/3 cup of cornmeal
1 teaspoon of salt
1/3 cup of water
1 tablespoon of olive oil
lettuce
tomato
hamburger bun
various seasoning (I use a bit of Greek seasoning)
2-3 slices of soy vegan cheese (check label)

What you do:

In a shallow dish, mix flour, cornmeal, salt and seasoning. In another shallow dish add water. Cut tofu into thin slices and preheat a medium frying pan to medium-high heat, and add olive oil. One at a time dip tofu slices into water then the flour-cornmeal mixture then place into frying pan for about 2-3 minutes on each side.
Prepare hamburger bun by spreading mayonnaise to each side and then prepared mustard to just one side. Cut slices of tomato and a few pieces of lettuce. Once tofu has cooked and is a nice golden shade, add to bun.
You can also turn this into a tofu vegan cheeseburger by adding a few pieces of soy vegan cheese. Again check the label for non dairy. This burger is very tasty and I even fed it to my meat eating roommate who loved it!!!
