Tofu Carrot Salad

What you need: 

4 cups shredded carrot
1/4 cups raisins
6 oz canned crushed pinapple, drained
8 oz Soft 1% fat Tofu
3 Tablespoons fresh lemon juice

What you do: 

Blend Tofu with lemon juice in blender until creamy.
Mix together in large bowl, shredded carrot, raisins and pinapple.
Add Tofu/lemon juice mixture and mix together.
Let chill in refrigorator for 15-30 minutes before serving.
