Tofu Cheesecake Pudding

What you need: 

12 ounces (3/4 pound) silken tofu
4 ounces vegan cream cheese
l/3 cup vegetable oil
2/3 cup vegan sugar
2 teaspoons vanilla
l/8 teaspoon salt
1 1/2 tablespoons lemon juice

What you do: 

Place all ingredients into a food processor and blend until smooth. Pour into small containers or vegan pie crust of your choice.

SO HOW'D IT GO?

I loved this! I had never tried silken tofu before and this one popped out to me because I've always loved cheesecake! It was quick and easy to make, the hardest part was not eating it all at once.
