Tofu Fajitas

What you need: 

1/2 of each: red pepper, yellow pepper, orange pepper, green pepper, cut lengthwise
1/2 onion, chopped
3-5 tablespoons chopped garlic
7 oz. extra-firm tofu, cut lengthwise
1/4 cup lemon or lime juice
olive oil
1/4 cup cilantro, chopped
cayenne pepper
ground cumin
salt and pepper
4 whole wheat tortillas
2 avocados, half for each plate
2 tomatoes, 2 quarters for each plate
salsa

What you do: 

Heat olive oil in a pan on medium heat. Add onions, saute. Add garlic, saute. Add lemon or lime juice, mix together. Allow juice to evaporate just a bit. Add salt, pepper, cayenne pepper, and ground cumin, mix well.
Add tofu, mix well, but try not to break the tofu apart. Add peppers, cover and steam for about 5 minutes, or until tender. Mix together. Once tender, this will limit the amount of tofu that will break when mixing.
Add cilantro last, almost immediately before serving, so it does not wilt too much.
Serve in tortillas, with the avocado, tomatoes, and a dollop of salsa on each plate...so good, you will want to make it every night!

SO HOW'D IT GO?

Mmmm... So delicious! I swapped out the tofu for Smart Strips, was out of cilantro and used fresh lime juice. The flavor was crazy. I'm so glad I have leftovers. :)
