Tofu Mac N Cheese
1 cucumber sliced and peeled
vegan chives and onion cream cheese
Peel the cucumber and slice into thin slices. Spread the cream cheese down the middle of each tortilla. Line the cucumber slices down the center of the tortilla on top of the cream cheese. Slice the fresh mushrooms and line them on top of the thin cucumber. Spread the sprouts on top. Roll up the tortilla as you would a wrap.
These are great for lunch - or even a light dinner
