Tofu Meat Balls

What you need: 

500g firm tofu – mashed
1 onion – finely chopped
4 cloves garlic – finely chopped
1/2 cup chopped nuts - I use cashews/ pecans/ almonds
1 cup vegan bread crumbs - or 2 slices bread crumbled
2 tablespoons rice flour (optional)
small bunch parsley, finely chopped
4-5 tablespoons of tamari (or soy sauce)
salt to taste
dried herbs to taste (I use spicy Italian)
1 tablespoon olive oil

What you do: 

Drain and mash the tofu with your hands until it is fairly fine. Combine all ingredients in a bowl and mix thoroughly. Let sit for 15 minutes for flavours to blend (optional).
Use hands to firmly press meat ball size balls and place on a lined baking tray. Bake at 200ºC for 30 minutes, then turn balls and bake for another 20 minutes. Let cool slightly before serving as they will hold together better.
I make these if ever I have to take a finger food for a get together and they are always a big hit served with tomato/chili sauce.

SO HOW'D IT GO?

I really liked the overall flavor of these, perhaps a little salty so next time I won't put in quite so much soy sauce or else I will take the suggestion above to use part balsamic vinegar.  I think I will form them to be a little smaller next time (like 1.5" meatballs) so they stay together better.  Also make sure to cut the onions into very small pieces, mine were a llittle too chunky and I think that was the main culprit in making some of these fall apart.  Overall I am very happy with this recipe, thank you!

These are delicious. A few of mine didn't stick together very well, probably because I didn't form them tightly enough or didn't care to measure out the ingredients. I'll be sure to correct that the next time I make these, yummmm!

these were delicious!
i subbed sunflower seeds and toasted flax seeds for the nuts.
i also cut the soy sauce to 3T and added 2T of balsamic vinegar.

we're going to have "meatball" sandwiches with them next time. thanks!

Actually I recommend letting the items sit.  They taste better and come out with a nicer crust.  My family loves these, better than my meatballs.
