Tofu Pasta with Tomato and Basil Sauce

What you need: 

1-2 packages regular, extra firm tofu
1-2 jars favorite tomato sauce ( or favorite homemade)
3-4 large fresh basil leaves
1 small clove of garlic
3-4 tsps good olive oil

What you do: 

Preheat oven to 400 degrees. Marinate tofu in 3 tsps. olive oil and finely chopped garlic clove for 10-15 minutes. Drain. Put on non stick baking sheet and cook for 30-45 minutes. In large nonstick skillet, heat crumbles/sausages until completely warmed thru. Add favorite tomato sauce and simmer for 20-25 minutes. Just before serving, gently shred basil leaves into sauce. Remove tofu from oven, plate it and top with sauce. Serve with salad and warm garlic vegan bread. Enjoy!
