Tofurkey Sandwich Worth Writing Home About

What you need: 

1 tablespoon vegetable oil
1 medium yellow onion, sliced into 1/8"-thick rings
8 slices of your favorite sandwich bread, toasted
vegan margarine (I use Veganaise grapeseed variety)
1 (5.5-ounce) package sliced vegan deli "meat" (I use Black Pepper Tofurkey deli slices)

What you do: 

My sister and a friend stayed over and in the morning I packed them lunches for the day, but I'd been out of town for a week, so they just got what was left in my fridge: Tofurkey, an orange, and a Clif bar. Well wouldn't you know it, I got separate phone calls from each person because she wanted to tell me how tasty the sandwich was!
1. Heat vegetable oil in a saute pan. Lay the onion rings down in the oil. No need to worry about separating them, that'll happen later. Use tongs or a fork to flip over the rings when they've started to caramelize and soften and are starting to smell really phenomenal the way sweet, cooked onions smell.
2. Spread toast with vegan mayonnaise. Be sure to take into account whether your target eating audience likes just a shmear or a slathering.
3. Separate the deli slices. I like to kind of fold them in half and stagger them on the bread. Usually three or five pieces will be good with each sandwich.
4. By now your onions should be cooked down and a bit stringy. Use the tongs/fork to pick up a few pieces and layer them onto the deli slice part of the sandwich.
5. Top with bread, cut on the diagonal, and voila! your friends will be calling you in the middle of the day to compliment your sandwich! If they don't, you should ask if those are really the sorts of people you should be associating with!
A word of warning - I started to get creative and sauteed some green peppers too. Don't try it. Not as good.

SO HOW'D IT GO?

i had my first tofurkey sandwich today! i used the oven roasted flavor and added spinach, tomato, red onion, veganaise and a squirt of mustard. It was pretty good but I'm not so sure about the tofurkey itself. I'll try the black pepper one next!

Very good!  I coated the bread pieces with margarine and fried them, then did everything else mentioned to construct the sandwich.  I tried a few flavors of Tofurky, and the black pepper tastes the best I think.  A close second is the hickory smoke.
A very easy and tasty sandwich!
