Tortilla-Black Bean Casserole

What you need: 

2 cups onion, chopped
1 1/3 cups green pepper, chopped
1 14 ounce) can stewed tomatoes
3/4 cup salsa
1/2 tablespoon garlic
2 tablespoons cumin
2 (15 ounce) cans black beans, drained
8 corn tortillas, divided
1 1/2 cups shredded vegan cheese, divided

What you do: 

1. Preheat oven to 350 degrees F. In a large skillet over medium heat, combine first 6 ingredients (through cumin), bringing the mixture to a boil. Reduce heat and simmer uncovered for 5 minutes.
2. Stir in beans. Spread 1/3 of the bean mixture over the bottom of a 13x9" pan. Top that with 1/2 the tortillas, overlapping as necessary and 1/2 the cheese.
3. Add another 1/3 of the bean mixture, then remaining tortillas and bean mixture. Cover and bake for 30 minutes or until heated through.
4. Sprinkle with remaining cheese and let stand for 10 minutes. Garnish with shredded lettuce and chopped tomatoes.
For more of a Mexican flair, add slices of avocado on top or your favorite guacamole. This is wonderful if you're in a south-of-the-border mood. Add a little Spanish rice and a glass of your favorite sangria for a complete and tasty meal.

SO HOW'D IT GO?

I needed a dish for a potluck at work and chose this one because of its good ratings.  I'm the only vegan in my group and always try to make something that not only can I eat, but that my non-veg co-workers will enjoy too.  They weren't even aware that it was vegan until I told them, and it got rave reviews.  I followed the recipe exactly as written and it came out great.

this was really good. i would definitely recommend using tortilla chips instead of tortillas. my tortillas ended up like soggy paper and that really grosses me out. other than that, i put only one can of black beans and a can of sweet corn. it was awesome. my roommate really liked it.

My sexy wife and I thought this was really awesome.  I dropped the ball on what would've been the delicious extras but it stood by itself remarkably.  Eat this

Seriously this recipe is FANTASTIC. After reading all the reviews about it being "soupy" I used slices of polenta instead of tortillas. You will not be able to stop eating this and you can serve it to anyone; they would never suspect it's "healthy". This is now my new favorite casserole. Try this. You won't be sorry!!!

One of our favorites from this site. We also usually spread one can of refried black beans, heated to ease spreading, before one of the veg layers. We tend to be "cheese whores" so we use a bit more cheese, too--well actually a lot more cheese  ;)

swapped one of the cans of beans for a can of corn and a can of black olives...Delicious!!!

I am eating this right now for lunch (of course sampled some last nite after it was made) and I have to say it is my new fave Mexican dish.  I love this dish for the flavor and it's simplicity. It is soooo easy to make!!
I followed your directions to the T but because I love a little spice I added garlic to the bean mix and while I was layering it I added some slices of jalpenos.

Your recipe is a God send when planning weekly meals.This will go in my 'keeper' box and will be made at least once a month. ;)b

This recipe was yummy and satisfying, even my omnivorous mate loved it! I did accidentally use 2 TB of garlic but it didn't seem to negatively affect the taste.  I cannot wait to eat the leftovers tomorrow.  :)>>>

This recipe was great!  I didn't have any tortillas on hand so I used lavash bread and it worked great.  My kids even asked for seconds which is rare with mexican type food.  This one's a keeper for sure!  Thanks for posting!
