Tortilla-Black Bean Casserole

What you need: 

2 cups onion, chopped
1 1/3 cups green pepper, chopped
1 14 ounce) can stewed tomatoes
3/4 cup salsa
1/2 tablespoon garlic
2 tablespoons cumin
2 (15 ounce) cans black beans, drained
8 corn tortillas, divided
1 1/2 cups shredded vegan cheese, divided

What you do: 

1. Preheat oven to 350 degrees F. In a large skillet over medium heat, combine first 6 ingredients (through cumin), bringing the mixture to a boil. Reduce heat and simmer uncovered for 5 minutes.
2. Stir in beans. Spread 1/3 of the bean mixture over the bottom of a 13x9" pan. Top that with 1/2 the tortillas, overlapping as necessary and 1/2 the cheese.
3. Add another 1/3 of the bean mixture, then remaining tortillas and bean mixture. Cover and bake for 30 minutes or until heated through.
4. Sprinkle with remaining cheese and let stand for 10 minutes. Garnish with shredded lettuce and chopped tomatoes.
For more of a Mexican flair, add slices of avocado on top or your favorite guacamole. This is wonderful if you're in a south-of-the-border mood. Add a little Spanish rice and a glass of your favorite sangria for a complete and tasty meal.

SO HOW'D IT GO?

Yummy! It was delicious. I used black and red beans and also used cilantro for the top. I did spread some salsa at the bottom of the casserole dish to keep the tortillas from sticking. I also added brown rice as an additional layer. Great recipe.  :)

Very good, and so easy to make! My mom used to make a similar dish with chicken, but I didn't even miss it in this recipe. I just made mine a little spicer by adding a few canned green chilis.

I decided to make this one simply because I have everything on hand... and I'm sure glad I did because it was GREAT!  Like others mentioned, I also put some salsa and tortillas on the bottom to make serving easier.  I used a mixture of green, red and yellow peppers, left out the tomatoes and added sour cream at the end.  I will make this recipe again!  :D

This was seriously, so good. I added some olives on top, and also a little chili powder, to make it spicier. The avocados were awesome on top, and some hot sauce to please my craving for heat. I'll definately make it again.

This was really easy to make and really tasty.  I added chili powder and lots of cayenne pepper to the bean mixture since I can't ever seem to get salsa that's hot enough for me.  Thanks for the recipe- I'll be making this again.

This was the first vegan meal I made for my husband, we both loved it! I added brown rice to the beans, and didn't use any type of cheese. Will make again and again

This was a great recipe! I made this for my parents and they liked it too. I put in 1 lb of firm tofu when I was sauteing(sp?) the onion and bell pepper together for extra protein. I thought that the 2 c. of onion would be way too much, but it wasn't at all, not for me anyways. I added regular cheese to mine too. I used 6 whole wheat tortillas instead of corn. And only 1 c. of chopped tomatoes and 1 c. of mild salsa. I mixed beans and used 1 can whole pintos and 1 can whole black beans. I really liked it! Great one for the family too.

I feel that this recipe had just a bit too much onion in it. I could also go for a bit of crunchiness, so I think the next time I make it, I'm going to put a few layers of tortilla chips in there.

Other than that, this is definately a DELICIOUS dish! I had a LOT of extra bean-filling (not sure why...), so I just popped it in the blender, and now I have some bean dip on hand!
