Totally Awesome Tacos

What you need: 

1/2 cup onion, chopped
olive oil, as needed
1/2 cup green bell pepper, chopped
1/4 teaspoon salt
2 cloves garlic, minced
1 (15 ounce) can light kidney beans
3/4 cup water
1 (1 1/4 ounce) packet vegan taco seasoning
1/4 cup nutritional yeast
10 taco shells

What you do: 

1. Saute onion in olive oil until brown. Add green bell pepper, garlic, and salt. Saute 3-5 minutes more.
2. Add in beans, water and taco seasoning.
3. Let simmer until reduced, stirring occasionally. While stirring, smash up the beans as much as you like (I use a potato masher to get them fairly smooth).
4. Stir in nutritional yeast. Place into taco shells.
My favorite toppings are avocado, tomato, lettuce, and vegan sour cream. Also, makes an awesome chip dip or layered bean dip. Enjoy!

I thought these tacos were good  :)  but next time i'm either going to leave out the nutritional yeast or only use about a tablespoon... i thought the flavor was a bit too overpowering... but i will make this again, thanks.

I love these! The only changes I made was to add a can of pinto beans (I wanted to double the recipe and that's what I had) and a couple of pinches of crushed red pepper. I managed to not have any tortillas (forgot I had whole wheat wraps but that's a different story..) so I put it on buns with lots of lettuce. This just hit the spot perfectly.

These were brilliant!  I absolutely loved them.. I followed the recipe exactly and they were perfect.  The nutritional yeast really adds something awesome to the flavor.  I'm sure I will be making these again (in fact I can tell this'll become a new staple of mine)!  Thanks so much for the recipe.
