Tricias all purpose cheese sauce

What you need: 

2 tablespoon flour
2 tablespoon margarine
1 cup soy milk
4 to 8 oz. vegan cheddar cheese substitute
salt to taste

What you do: 

Melt margarine in a medium saucepan over med heat. Add flour until bubbly. Slowly add soymilk. Bring to a boil stirring constantly (a whisk works good) . Grate cheese and add slowly stirring until you get the consistency desired. Add salt to taste. Note: If the mixture doesn't get thick enough before you add the cheese, whisk in a tbs. flour.
Use this sauce on nachos, mac and cheese and baked potatoes.

SO HOW'D IT GO?

Well I'm newly vegan (only a few months) and just do not like the taste of the vegan cheeses I've tried so far (rather than tofutti cream cheese) but this was okay. I added a can of Rotel salsa, which helped.  :-\
