Tricken Fingers

What you need: 

1 (14-ounce) container extra firm tofu
2 cups seasoned bread crumbs
oil for frying

What you do: 

1. Drain and press tofu. Cut tofu into 16 rectangular pieces. (I usually cut it in half lengthwise and then cut both halves into eight rectangles, mimicking a chicken finger.)
2. Moisten each piece of tofu with a SMALL amount of water and roll in breadcrumbs. You want the crumbs to stick to the tofu.
3. Drop into hot oil for 5 to 7 minutes, or until golden brown. Drain. We serve this with homemade fries and mustard. All the kids LOVE it.
Source of recipe: My son wants to be a chef and we were playing around with kids recipes...with a healthy spin. I think we started with another version of this recipe and simplified it.

I've made these since my son was in grade school, he loves them! Still asks for them even at 16, and now he's learning how to cook them for himself.
