Tropical Pineapple-Jicama Salsa

What you need: 

1 pineapple, finely chopped + its juice
1 med sweet onion, minced
1 small jicama, minced
2-5 jalapeno, finely minced (to taste + depends on the chilis)
2 stalks lemon grass, finely minced
2-3 tablespoon galangal, finely minced

What you do: 

Mix all & let season 1-2 hrs in refrigerator. Serve fresh with tortilla chips.
