"Tuna" and Sweetcorn

What you need: 

2 cups chickpeas
1 teaspoon oregano (optional)
2 teaspoons basil (optional)
2 cups sweetcorn
1 1/2 tablespoons olive oil
Coriander, to taste

What you do: 

1) Drain chickpeas and place in food processor. Add oil and seasonings and pulse. You want the mixture to be slightly chunky, less like a hummus consistency and more of a chunky consistency.
2) Empty the mixture into a serving bowl. Mix in sweetcorn and serve.
It would be really nice in a sandwich!
You can also use this without the sweetcorn and add some breadcrumbs instead and more seasonings/sage so that it tastes like chicken and stuffing!
Source of recipe: I was making some hummus with oil instead of tahini but then messed around a bit and discovered this:)
