Unmashed Potato Leek Soup

What you need: 

1 1/2 pounds or 750g Russian banana fingerling potatoes, whole
2 large leeks, coarsely diced
3 medium tomatoes, diced
1 can chickpeas
1 can sliced mushrooms
1 can vegetable broth
few dashes olive oil
black pepper to taste
3 garlic cloves, sliced
oregano leaves or lemon grass
fresh basil

What you do: 

Combine all ingredients in a casserole dish. Cover and bake at 350 Fahrenheit (175C) for 45 minutes to one hour.

SO HOW'D IT GO?

this was a big hit!  next time I'll just use regular potatoes because they're cheaper and easier to clean - unless it's a special occasion.  I used a 28 oz. can of tomatoes instead of fresh.  you can use any kind of beans for the chickpeas.  it was a great, hearty soup for a cold day.
