Vegan Banana Pancakes

What you need: 

1 cup flour
1 tablespoon brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
dash cinnamon
2/3 cup nondairy milk (I use soy)
1/2 banana, very ripe and mashed
1 teaspoon vanilla

What you do: 

1. Mix flour, vegan sugar, baking powder, salt and cinnamon together.
2. In another bowl, combine all other ingredients. Add wet ingredients to dry ingredients and stir well. Add more milk if batter is too thick.
3. Cook on medium-high heat in skillet until browned on both sides.
Serve with maple syrup, icing sugar or jam.

So i LOVE the taste but not crazy on the texture. It taste like a banana cake. I cut up my bananas instead of mashing them up. I would like to make these again to see if i can get that texture thing right.

my friend said it tasted like cake :)
served with tofacon and berries :)

This was a great recipe! I used wheat flour instead of regular flour and I didn't mash the bananas, I just just them up and added them into the batter. I also used raspberry syrup and made a vegan chocolate shake. Delicious!

These are the best pancakes ever. They are sooo delicious. Even my family has asked me to make these several times already, and they are far from being vegan. :D
I usually add a bit more banana though to make the pancakes taste sweeter AND I use water 'cause none of my local stores sells nondairy milk. Yumm.

;)b this was an amazing pancake!! my boyfriend is seriously making me end my review so i can go make more!

i made a few changes though; no soymilk, just substitute water, and a bit of veggie oil, and i did the whole banana instead of half. these were so moist! and apparently someone can't get enough of them!  ;)

so i tried to make these pancakes twice. i couldn't get them to cook in the centre. they were all doughy and gooky. i tried to thin them out with lots of soy milk and everything and nothing would work. my friends and i couldn't figure it out. what went wrong? any ideas?

make sure you mix the batter well, maybe add a tad bit more soy milk to bring the batter to a more liquid consistency. and cook them at a low temperature! pancakes require a lot of patience, hence why I rarely make them! but cooking them at a low temperature will ensure they cook through. when you put the batter in the pan, wait until you see lots of bubbles form on the pancake, then flip.

These pancakes were so simple to make! I've never had american style pancakes before and they were so delicious, fluffy and moreish. I served them with melted chocolate, bananas and peanut butter. Yum!

I just made this recipie and threw in a 1/4 cup of old fashoned oats and 1 tablespoon of organic salted chunky pb and they are out of this world!!! ;)b
