Vegan Blueberry Crisp
4 cups fresh blueberries (can use frozen, but fresh cooks much better)
1 cup flour (I have used soy and wheat successfully)
3/4 cup sugar or other vegan sweetener
1/2 teaspoon cinnamon, or to taste
1/2 cup vegan mayonnaise (I use Vegenaise)
dash of nutmeg
1. Preheat oven to 350 degrees F. Wash blueberries and pour into an 8 inch square baking dish or similarly sized dish.
2. Combine dry ingredients in a medium bowl until well mixed. Add Veganaise to the mixture and stir until the mixture resembles coarse crumbs.
3. Sprinkle over the top of the berries and bake for 35-40 minutes, or until top is lightly browned.
