Vegan carrot cake
1 cup sugar
1 1/2 cups flour
3 teaspoons baking powder
1/2 cup nondairy milk (I use oat)
1/2 cup rapeseed oil
1 teaspoon almond butter
3 medium carrots, grated
1/2 cup raisins
2 teaspoons sunflower seeds
1. Preheat oven to 430 degrees F. Put sugar, flour, baking powder and salt in a bowl and mix them together.
2. Add oil and milk to the bowl, and mix until it is homogeneous, then add the almond butter.
3. Add the grated carrots, raisins and sunflower seeds to the mix and stir together.
4. Put the mix in a loaf pan and bake for 45 minutes.
