Vegan Eggless Salad

What you need: 

1/2 red onion
1 tablespoon Italian parsley
1 stalk celery
1 pound firm tofu
1/2 cup vegan mayonnaise (I use Veganaise)
1 tablespoon mustard
Salt
Pepper
Garlic salt

What you do: 

1) Dice red onion, Italian parsley, and celery.
2) In a bowl, mash the tofu with a fork until crumbled. Add the diced red onion, Italian parsley, and celery to the smashed firm tofu. Add vegan mayonnaise, mustard, salt, pepper, and garlic salt to taste. Enjoy!
Serve chilled on a toasted bread slice or cracker.
