Vegan Mac and Cheese

What you need: 

1/2 cup nutritional yeast (I used Red Star brand flakes)
1/2 cup flour
2 cups water
1 tablespoon mustard
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
yellow food coloring(optional)

What you do: 

Noodles: Boil water, cook noodles for 10 minutes, drain.
Sauce: Mix the yeast and flour together in a pot, add half the water, heat it up and whisk it when it starts to boil. Add the rest of the water, whisk until there are no lumps. Turn off the heat and stir in the mustard, garlic salt, onion powder and yellow food coloring. Pour over noodles and enjoy=)
This recipe is for 1lb (16oz) box of noodles.

SO HOW'D IT GO?

I added some oil for fat, and replaced half the water with hazelnut milk. This was delicious and so easy!

I have to admit that I haven't tried following this recipe exactly, but this looks about like the way I've always made vegan macaroni and cheese, too.  It doesn't taste like the dairy version, but I have to limit my soy intake because of thyroid disease, and to me, it's also about alternatives, not just replacing ingredients. 

Kenjiro, I don't understand why your recipe got such bad reviews, while the other nutritional yeast-based recipe was so popular.  I think people may have been expecting something else.

Sorry, I don't understand why you people would not like this. I have tried it with 2Tbsp margarine and did'nt notice a difference, so thought i'd just keep it fat free. If you want it thicker, just reduce the amount of water.

Instead of the flour and water, try blending 1 cup of raw cashews with 1 1/2 -2 cups water until really smooth (add more water if you prefer it to be a little runnier), add a little Tamari, and instead of yellow food coloring add some tumeric... not quite the same as regular mac and cheese, but has a great flavor...

i feel like vegan mac and cheese needs vegan butter and soy (or other nondairy) milk just like regular mac and cheese needs butter and milk.

Yeah definately not one of the best mac and "cheese" recipes on this site.  Personally, it was wayyy too runny for me.  I suggest adding some cornstarch to it to thicken it up a bit.  I don't know how else to alter it though.  Maybe if it was just a bit thicker it would be better.

I'm not surprised this doesn't turn out well, there's no fat in it. Dairy cheese is high in FAT, so any vegan version has to  match the fat content if it's going to satisfy mac 'n cheese cravings.

this was DISGUSTING. im pretty sure i didnt do anything wrong since i followed every direction. it looks good but it tastes terrible.
