Vegan peanut butter and bananna stuffed french toast

What you need: 

1 and 1/2 cup of almond or soy milk

1 tbls of ground flax seed

1 tsp of cinnamon

1 tsp of vanilla extract

4 pieces of texas toast

1 bananna sliced

few tespoons of peanut butter

Cooking spray oil

What you do: 

Mix flax seed and 3 tablespoons of water in a small bowl and mix. Let it sit for about 5 minutes until flax seed has the consistency of an egg. 

Whisk together non dairy milk, vanilla extract, cinnamon and flax seed in a seperate bowl.

Slice the banannas and make a peanut butter and bananna sandwich between two pieces of texas toast.

Spay the pan with oil and heat to medium to medium high heat. 

Add flax seed to wet mixture and dunk both sides of sandwich in the wet mixture and put into the hot pan.

Brown both sides of toast and then serve.

Excellent with butter and/or syrup.

SO HOW'D IT GO?

This looks like an easy take away lunch that anyone can make. It would be a healthy and filling food for the children too. Since there is banana and soy milk, the protein content would be high.
