Vegan Potato Salad

What you need: 

10 petite red potatoes, quartered
1/2-1 cup yellow onion, chopped
1/2-1 cup green pepper, chopped
1/2-1 cup vegan mayonnaise
1/4-1/2 cup mustard
1 cup sweet pickle relish, with juice
salt and pepper, to taste

What you do: 

1. Boil potatoes until soft, but not mushy. Add remaining ingredients.
2. Chill and serve.
It is always a hit with my non-vegan family and friends.

SO HOW'D IT GO?

I've made a few of the potato salad recipes on vegweb and this one is definitely a keeper.  One thing I have noticed though is that I find I like it better when I boil the potatoes whole, then peel and chop them afterwards. Somehow they seem to hold up a little better. When I cut them up before boiling them they always end up a little mushy and break apart a little when I mix them with the mayo.

I added a little fresh dill and a few diced sweet red bell peppers, it was wonderful! Great recipe
