Vegan Quiche Burgers

What you need: 
25 to 30 ounces firm or extra firm tofu
1/3 cup gluten flour
3 tablespoons agar flakes
1/4
cup dijon mustard
2tablespoons red wine vinegar
1/2
cup nutritional yeast flakes
1
tablespoons white pepper
(optional) dash of salt
1
cup finely-chopped onion
1
cup sliced mushrooms
1 ounce each olive oil and red wine
What you do: 
- Preheat oven to 400F
- Saute onions for 5 minutes in olive oil and red wine, add mushrooms and saute another 5, then remove from heat
- Mix all other ingredients in a food processor and blend into a dough
- Add dough to veggies and mix thoroughly
- Fill muffin-top pans to make 12 burgers, spreading level with back of spoon
- Bake for 45 minutes at 400F
 
Makes 12 burgers
 
For other flavors, omit dijon mustard, nutritional yeast and white pepper and
add more moisture along with some other spices or flavorings.
