Vegan Sausage

What you need: 

2 1/4 cups vital wheat gluten
1/2 cup nutritional yeast flakes
3 teaspoons coarsely ground pepper
2 teaspoons ground paprika
1 teaspoon dried chili powder
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon dried oregano
1/8 teaspoon ground allspice
1 1/2 cups cool water
3/4 cup vegetable broth, cold
2 tablespoons olive oil
2 tablespoons soy sauce
3 tablespoons hot sauce

What you do: 

1. In a bowl, mix together dry ingredients (vital wheat gluten, nutritional yeast flakes, pepper, paprika, chili powder, garlic, salt, oregano, and allspice).
2. In a different bowl, stir together water, broth, oil, and soy sauce.
3. Combine, and use your hands to mix (the mixture gets very tough). Mix in the hot sauce.
4. Break into 4 pieces, and place in the steamer for 30 minutes.

SO HOW'D IT GO?

You are missing the very important step of wrapping each piece in aluminum foil like a tootsie roll.  Make sure to do this tightly to get a nice dense sausage.  If you wrap them too loosely or do not use enough foil (or cheese cloth or whatever kind of wrap you wish) then the sausages will "explode" in the steamer and turn out spongy.

I have made variations of this same recipe many times and the results are always excellent.  They are really easy to make versus other wheat gluten-based recipes (you do not need to knead this dough, just combine everything, stir, wrap, steam, and you're done).  They have a texture almost exactly like the Field Roast brand sausages (which I actually like more than Tofurkey), they grill up very nicely, and the cost is so much cheaper than buying the pre-made ones in the store.
