Vegan Split Pea and "Ham" Soup

What you need: 

1 tablespoon oil
2 large onions, chopped
1 to 2 teaspoon salt
2 cups dried split peas
5 cups water
paprika, to taste
1 teaspoon garlic powder
1 vegan chicken bouillon or veggie bouillon cube
liquid smoke, to taste
vegan sausage, cut into little chunks and fried

What you do: 

1) In a skillet, heat oil and fry onion and salt over medium, until soft.
2) Add split peas, water, bouillon cube, paprika, and garlic powder and bring to a boil. Reduce heat and simmer about 20 minutes. While the soup simmers, fry the diced vegan sausage with the liquid smoke.
3) Once soup is cooked and the split peas are soft, puree the soup. Return soup to pot and add the diced vegan sausage. Enjoy!
Source of recipe: I have always loved the texture and flavor of a good split pea soup...but I don't need to have all the cream, fat and real meat in it...bletch. Here's a basic but ohhh-so- delish split pea and ham soup.
