Vegetable Crock-Pot Pot Pie

What you need: 

1 cup vegetable broth
1 1/2 cups potatoes, chopped
1 cup carrots, chopped
1 cup celery, chopped
1/2 cup peas
1 tablespoon dried onions (you could use fresh)
1 1/4 cups water
1/2 cup flour
1/4 cup canola oil
1 teaspoon salt
1/2 teaspoon garlic powder
1/3 teaspoon pepper
2 1/4 cups baking mix (I use Bisquick)
2/3 cup nondairy milk

What you do: 

1. In a crock pot, put broth and vegetables (potatoes, carrots, celery, peas, and onion).
2. In medium bowl, whisk together the water, flour, oil, and spices (salt, garlic powder, and pepper) until smooth.
3. Pour mixture into crock pot and stir. Cook on high for 1 hour until thick and bubbly.
4. Mix baking mix and nondairy milk (you could use any biscuit or dumpling recipe) and spread over top of vegetable mixture in crock pot. Reduce heat to low and cook another 2 hours.
Source of recipe: I knew a basic pot pie recipe that my mom used to make, but I wanted to make it in the crock pot so I adjusted a few things and it worked great!

Hmm can't figure out how to rate this one the new site.

So as Justus mentioned, 1 hour is not enough for the veggies. The mixture was not thick and bubbly as described. I have a brand new crockpot. I cooked for 2 more hours with the Bisquick, and they were still not soft. I think they probably need 2 hours before adding the bisquick.

I think this could be good, but I'll have to try again with a longer to see...

This woul've probably been good, but my veggies weren't done. I followed the recipe, but I think it was my crockpot that failed. Next time I will take that in to consideration because I do plan on making this again, but I'm going to cut down on the celery. Just too much celery for my taste.

The first time that I tried this recipe, my family and I were not impressed (well my husband and I weren't, but our 3 & 4 year old children didn't complain). Anyway, I tried this recipe again on yesterday, and it was AWESOME!  :D I'm not sure what I did or didn't do the first time, but I will probably be making this every week or every other week.  :)>>>  I will have to double or triple the recipe next time because it just wasn't enough. I have two crock pots, so it shouldn't be a problem for me at all.  ;)b

We liked this a lot!  We thought it needed more salt, and we also added in one crumbled package of tempeh.  Next time I may try leaving out the oil like scottysgirl02 and see how we like it.  Thanks for the recipe--it's super easy.

For Weight Watchers Points Plus Program, this comes out to be 9 points per serving.  I'm eyeballing the 1/4 cup of oil, and trying to find a way around it.  Can it be omitted, or substituted? 

I love pot pie, and I love my crock pot, and I really want to introduce them to each other.  Help!

Overall, this was TASTY! I added some extra herbs/spices and used fresh onions and garlic. The bad thing about this was my veggies weren't cooked all the way through after the full 3 hours, and I sliced/diced them tiny because I was worried about it. Thanks for the idea though, next time I'll start the pot earlier and let them cook an extra hour before adding the biscuit topping.

This was so incredibly good that Im sitting here eating leftovers for breakky!

I doubled the veggies, added turnips and used a home-made Bisquick recipe...and STILL AWESOME!!!

This recipe is really good. I added some fake chicken to it and put a bag of frozen stew veggies. My kids even loved it.

I used Heart Smart Bisquick (less fat) and used carrots, peas (frozen), corn (frozen), and diced potatoes. This was really nice and very much comfort food. I love that I didn't have to sautee anything before putting it all in the crock pot, because this makes preparation even easier! Thanks for the recipe!
