Vegetarian Stuffing

What you need: 

6 cups bread, diced
2 tablespoons margarine
1 medium onion, diced
3 stalks celery, sliced
2 large carrots, peeled and thinly sliced
1/4 teaspoon rosemary
1/4 teaspoon thyme
1/4 teaspoon sage
1/4 cup fresh parsley, chopped
3 tablespoons raisins
1/2 to 3/4 of a red delicious apple, optional
1/4 cup walnuts
1/4 cup pecans
1/2 teaspoon salt, or to taste
1 1/2 cups vegetable stock
pepper, to taste

What you do: 

1. Preheat oven to 350 degrees. Place vegan bread in a 9 x 13 baking pan and place in oven for about 15 minutes, until the vegan bread is well toasted. Meanwhile, warm the margarine in a saucepan and saute onion, celery and carrots over medium heat until onion is translucent.
2. Remove vegan bread from oven and add onion mixture, herbs, parsley, raisins, optional apple, nuts and salt. Mix well. Carefully drizzle the stuffing with vegetable stock and toss gently.
3. Bake, uncovered, for 20-30 minutes. Season with black pepper if desired.

SO HOW'D IT GO?

i doubled the amount of vegetable broth and this was incredible. best stuffing i've ever made. oh, i also did not add raisins, but used two red apples. 5 stars

i'm not sure if i messed it up or not but it was a little dry. i didnt find it very exciting. maybe its missing its punch cause its not baked inside of something.... i interchanged the raisins for dates and that was tasty  :-*

This stuff is SOO GOOD!!  This is the first time I have ever made stuffing and it turned out better than expected!  I omitted the nuts, carrots, apple, and raisins since I wanted it to mock the traditional chicken flavor stuffing.  And it worked! My sister was impressed with this dish and admitted that it tasted better than my mom's stuffing, which was meat flavored.  After I baked the stuffing, I wrapped it in plastic wrap and when I was ready to re-heat it, it molded nicely, just like I wanted it!  My only regret is not making more because I made 2 cups worth.  2 cups of bread = 2 pieces of wheat bread.  Thanks for this spectacular dish! I can't wait to eat this again  :)

i notice the Bragg's in the background of the photo. would that be a good addition to this dish?

Are the nuts supposed to be whole or grounded?

I roughly chop them.  Definitely don't grind them.  You want their crunch!

This was great and everyone loved it.  :)  We didn't add the raisins out of personal preference.  :-X
