Vegetarian Taco Casserole

What you need: 

2 cups corn chips, broken into bite sized pieces (I use baked Tostitos)
1 large onion, chopped
1 large bell pepper, chopped
1 tablespoon canola oil
2 cloves garlic, minced
1 cup frozen hash browns
1 (4 ounce) can chopped green chilies
3 cups cooked long grain or brown rice
1 cup salsa
3 tablespoons hot chili powder
2 tablespoons cumin
1 tablespoon leaf oregano
1 (15 ounce) can fat free refried black beans

What you do: 

1. Preheat oven to 350 degrees F. Spray 11x9" baking pan with nonstick cooking spray. Place crushed tortilla chips in the bottom.
2. In large non-stick skillet, add onion, bell pepper, oil, garlic and hash browns, cooking until peppers and onions are soft.
3. In a bowl, combine chilies, rice, salsa, chili powder, cumin, oregano, and black beans. Add this mixture to onions and peppers and cook until warm.
4. Transfer mixture to baking dish and bake for 20 minutes. Optionally, top with more crushed chips, chopped tomatoes, and vegan cheese for a special treat!

SO HOW'D IT GO?

Ummm.. Sprinkle on cheese and heat until melted? Are you trying to start a witch hunt over some cheese?

lol no... i usually just leave the junk off cause it pollutes the flavor of the dish for me :) but yours looked purdy so i thought it might be something that i hadn't tried :)

Try Daiya. You wil love it. They sell it at my Krogers, and as soon as I tried it the first time, I wa hooked.

i've had daiya and thought it was super good at the very beginning of trying it... a few days later i found it sorta repulsive... i only appreciate it now on a handful of things and i usually need to broil it for a sec to melt properly (or to MY liking)... how did you get yours so melty/ real cheesy looking?

Daiya shredded cheddar. I think it melts better than any other brand I've tried.

this was awesome and my whole family loved it. my brother (definately not vegan) said he "couldn't even tell it was vegan" which, from him, is a compliment. this recipe made a massive amount of food but we ate it aaaall. i chopped up tomatoes to put on top, used pinto instead of black beans (black would've been better though!), and reduced the chili powder to 2T which was more than enough. and i didn't find it dry at all, it was an perfect texture. great recipe!!

I made a few small alterations.  I used 2 cups of rice, about 2/3 of a bag of frozen O'Brien potatoes, some meatless crumbles with taco seasoning, a can of vegetarian refried beans, and added a can of diced tomatoes.
DELICIOUS!  High five!  This one will become a regular meal.  Especially since it fed my girlfriend and I for 5 different meals (3 dinners, 2 lunches).
