1 carrot, diced
1/2 green bell pepper, diced
1/2 small onion, diced
3 garlic cloves, diced
2 cups cooked lentils, slightly firm still
1 (1.41-once) packet sloppy joe seasonings
1 (8-ounce) can tomato sauce, you can also use salsa
1. Heat oil in a frying pan over medium heat. Add all veggies (carrot, bell pepper, onion, garlic, and potatoes) and cook until onions are clear and carrots are slightly cooked.
2. Add lentils and sloppy joe seasoning packet. Add water and tomato sauce as directed on seasoning packet.
3. Put mixture on bun and enjoy.
