Veggie Cups

What you need: 

12 slices bread, crusts trimmed
1 package veggie mince e.g. Yves brand
2 large carrots, grated or shredded
1/2 cup finely diced spinach
1/2 cup frozen corn
2 egg substitutes (equivalent to 2 eggs)
barbecue sauce, to taste

What you do: 

Preheat oven to 350.
Meanwhile, stir together mince, carrot, spinach and corn. Stir in egg replacer and mix well. Add barbecue sauce until mixture is good consistency (not too runny, not too dry---as if you were making burgers or loaf with it).
In lightly sprayed muffin pan, press one slice of bread into each space in the muffin tin. Gently shape it to cover the tin and make a muffin cup. Put muffin pan with bread into oven for 5 minutes. Remove from oven and spoon the veggie mixture into the cups. Bake for 20 minutes. These pack really well for lunches!
