Veggie Fried Rice
5 pieces cinnamon-one cm each
25 ml of oil
500 gms rice
12 beans cut into small pieces
3 carrots cut into small pieces
250 gms peans; three small green chillies
2 onions - sliced into thin pieces
1 teaspoon cumin seeds
salt to taste
Heat the oil and add cumin seeds to the oil. Allow them to turn light brown then add clove, cardamom, cinnamon and allow them to turn brown. Add onion slices and the rest of the vegetables, and allow them to cook under steam for about 15mins. Once the vegetables are reasonably cooked (soft), add rice and water (measure 1.5 cups of water for every cup of rice)and salt to taste. You can also add a bit of black pepper should you want to. Allow the rice to cook along with the vegetables for about 15 mins.
You can also add bell pepper neatly sliced to the steaming rice. Eat it with green salad or tomato sauce. You will have a great rice dish.
